Vinous Stephen Tanzer - 01 Jul 12
Bright lemon-yellow. Very closed but pure nose hints at pineapple, crushed stone and petrol. A sweet, rich fruit bomb in the mouth, but with terrific sugar/acid snap and grapefruit cut giving sharp definition and lift to the middle palate. Finishes with a hint of resin and terrific lingering soft citrus and mineral flavors.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
